Blend ripe mango flesh until smooth. Set aside.

Dissolve gelatin in warm water. Mix with mango puree, coconut milk, and sugar.

Pour into individual moulds or a large dish. Refrigerate for at least 4 hours until set.

Unmould and serve chilled. Top with fresh mango cubes and evaporated milk.
