Traditional Cantonese sweet red bean soup, slow-cooked until the beans are soft and the broth is thick and fragrant.

Soak red beans overnight. Drain and cook in fresh water for 1 hour until soft.

Add rock sugar and simmer until dissolved. Adjust sweetness to taste.

Add dried tangerine peel for fragrance. Simmer 5 more minutes.

Serve hot in bowls. Optionally add cooked sago or glutinous rice balls.
