Cook rice until just done. Prepare mixed seafood (shrimp, squid, scallops) and season with salt and pepper.

Make a white sauce: melt butter, add flour, gradually whisk in milk until thick. Season with salt, pepper, and cheese.

Mix rice with seafood and half the white sauce. Transfer to a baking dish.
