Beat 4 eggs. Mix in bean sprouts, spring onion, shrimp or char siu, soy sauce, and sesame oil.

Heat oil in a wok or pan over high heat until very hot.

Pour egg mixture in and cook until bottom is set and golden. Flip and cook other side.

Make gravy: simmer chicken stock with soy sauce and cornstarch until thickened. Pour over omelette.
