Cooking Steps

Cut chicken into bite-sized pieces. Season with salt and pepper.

Sauté onion, garlic, and ginger until fragrant. Add curry powder and stir 1 minute.

Add chicken and brown on all sides. Add coconut milk and chicken stock. Simmer 20 minutes.

Add potatoes and carrots. Cook until vegetables are tender. Serve over steamed rice.
