Clean the fish and score both sides with diagonal cuts. Season lightly with salt.

Place fish on a steaming plate. Top with julienned ginger strips.

Steam over high heat for 8-12 minutes depending on thickness, until flesh flakes easily.

Pour off excess liquid. Top with spring onion. Heat oil until smoking and pour over fish. Drizzle with soy sauce.
