Make batter: mix flour, baking powder, salt, and cold beer or sparkling water until smooth.

Cut potatoes into thick chips. Parboil for 5 minutes, drain and dry. Fry at 160°C for 5 minutes. Remove.

Coat fish fillets in batter. Deep-fry at 180°C for 4-5 minutes until golden and crispy.

Fry chips again at 190°C for 2-3 minutes until golden. Drain. Serve with tartar sauce and malt vinegar.
