Pan-seared beef steak with rich black pepper sauce and mashed potato

Take steak out of fridge 30 minutes before cooking. Season generously with salt and black pepper.

Heat a cast iron pan until very hot. Add oil. Sear steak 3-4 minutes per side for medium-rare.

Rest steak for 5 minutes. Meanwhile, make pepper sauce: deglaze pan with brandy, add cream and crushed peppercorns.

Simmer sauce until thickened. Pour over steak. Serve with fries and vegetables.
